Several Apple Pie Recipes

Apple Spice Drop Cookies - Makes 3 1/2 dozen

It's fall so let's enjoy the fruits of the season with these wonderful cookies.

1/2 Cup butter, softened
2/3 Cup sugar
2/3 Cup brown sugar
1 egg
1/4 Cup apple juice
2 1/4 Cup flour
1 tsp. cinnamon
1/2 Tsp. baking soda
1/2 Tsp. nutmeg
1 Cup apples, peeled (2 GRANNY SMITHS), finely chopped
1 Cup walnuts, chopped

FROSTING:
1/4 Cup butter, softened
3 Cups powdered sugar
1 tsp. vanilla
3-4 Tbs. apple juice

Preheat oven to 375 degrees.

In a mixing bowl cream the butter and the sugars together. Beat in the egg and apple juice. Combine the dry ingredients in a small bowl and gradually add the dry ingredients to the sugar mix, blend well and then add the apples and walnuts. Place on a greased cookie sheet 2 inches apart.

Bake at 375 degrees for 13 minutes or until golden brownPlace on wire rack to cool.

Frosting: Add the sugar, butter, vanilla and apple juice together and mix until smooth. Frost cookies.

Apple Dumplings

Dough:
2 cups flour
1 Tbs. baking powder dash of salt
3 Tbs. sugar
1/3 cup oil
2/3 cup milk

Filling:
2 cups green apples, peeled and slicedsugarcinnamonegg wash:
1 eggSyrup:
1 cup water
1/2 cup sugar
2 tablespoons butter
1/2 teaspoon cinnamon
5 hot cinnamon candies (optional)

Mix all dough ingredients together to form a soft dough. Roll out on floured pastry board to a thickness of 1/2 inch. Cut into 5 or 6 inch squares.In a small bowl lightly coat cut apples with sugar. Place them on top of biscuit dough and sprinkle cinnamon on top. In a small bowl, beat egg. Using a pastry brush, wet edges with egg and fold it over the apple, pinch and flute them to look well, and encase the apple completely. Brush the tops with egg and sprinkle with sugar. Place on cookie sheet and bake at 425° for 25 minutes, then reduce heat to 350° for 30 minutes. Pour sauce over each dumpling at serving time. Syrup directions:Using all ingredients, bring to a boil on the stove and cook a couple of minutes. Add cinnamon candies and cook just until candy melts over low heat

Whole Wheat Apple Bread

This is a flavored whole grain bread with apple bits, apple juice and apple butter.

Prepare sponge:
1/4 cup honey
2 cups apple juice, heated to lukewarm
1 Tbsp. active dry yeast
2 1/2 cups whole wheat bread flour

Add to the above and knead then let rise:
2 Tbsp. salt
1/4 cup softened butter
1/2 cup apple butter
1 cup apples, coarsely chopped
2-3 cups whole wheat flour

Cut and shape into two 8-1/2" x 4-1/2" loaves. Slit and glaze with butter and sesame seeds for topping.Bake at 350 F for 35 to 45 minutes. Cool thoroughly on wire racks

Cinnamon Raisin Apple Crumble
Yield: 4 Servings

6 tb Flour
3 tb Whole wheat flour
3 tb Quick oats
3 tb Brown sugar
1/2 ts Cinnamon
1/4 ts Cloves
1/8 ts Salt
2 tb Butter, cut into pieces
4 ea Tart apples, peeled, cored, chopped
1/4 c Raisins
1/4 c Sugar
1/2 c Apple juice
2 tb Lemon juice

Preheat oven to 375F. In a medium mixing bowl, whisk together the flour, whole wheat flour, oats, brown sugar, cinnamon, cloves and salt. Use your fingers to rub the butter until the mixture resembles coarse meal. Set aside. In an 8 x 8 glass pan, stir together the apples, raisins, sugar, apple cider and lemon juice. Pat the filling into an even layer. sprinkle the reserved topping over the apples and bake for 20 minutes. Use a spatula or table knife to make cuts through the crumble all across the top, dispersing the juices into the topping. Bake for an additional 25 minutes, until nicely browned and bubbling. Place on a rack and let cool for about 15 minutes.
