Apple Muffins ( Makes a dozen muffins )
Ingredients:
***MUFFIN***
1 cup Flour
3 teaspoons baking powder
1/2 teaspooon salt
1/2 cup sugar
1/4 cup brown sugar
1 cup Quaker Oats (optional)
1 cup pared and chopped apples (or u can grinde apples)
1 egg, beaten
1/2 cup milk
1 teaspoon cinnamon
***TOPPING***
1/4 teaspoon cinnamon
1 tablespoon sugar
Directions:
Preheat oven to 350 degrees. Sift flour, baking powder and salt together. Add remaining ingredients except topping; mix only until ingredients are moistened. Spoon into greased muffin tins. Prepare topping and sprinkle on muffins before baking. Bake for 15-20 minutes.

APPLE MUFFINS (double ingredients by the added apple for more servings)
Muffin Sampler recipe
1 apple
1 tsp. cinnamon, divided
2 tbsp. brown sugar
Peel apple, remove core and cut into small pieces. Add apple to liquid ingredients. Add 1/2 teaspoon cinnamon to dry ingredients. In small bowl combine brown sugar and 1/2 teaspoon cinnamon. Sprinkle crumb mixture over muffins. Bake at 400 degrees for 20 minutes or until golden brown.

APPLE STREUSEL MUFFINS - BREAD
MUFFINS:
1 1/2 c. flour
1/4 c. sugar
2 tsp. baking powder
1/2 tsp. cinnamon
1/4 tsp. salt1/8 tsp. nutmeg
1 c. apple, pared & shredded
1/2 c. milk
1/4 c. vegetable oil
1 egg, beaten
STREUSEL TOPPING:
1/3 c. brown sugar
2 tbsp. flour
1/2 tsp. cinnamon
2 tbsp. butter
1/3 c. chopped walnuts (optional)
In medium bowl, sift together flour, sugar, baking powder, cinnamon, salt and nutmeg. Stir in apple; set aside. In small bowl combine milk, oil and egg until blended. Add to dry ingredients; stir just until moistened. Spoon half of batter into 12 greased muffin cups.
Make topping by mixing all ingredients together and sprinkle on muffins, reserving 3 tablespoons. Cover each muffin with remaining half of batter. Sprinkle reserved topping on muffins. Bake at 400 degrees for 20 to 25 minutes. (Recipe makes up in loaf by spooning into loaf pan and baking at 350 degrees for 45 to 50 minutes.)

2 tbsp. butter
1/3 c. chopped nuts
In medium bowl, sift together flour, sugar, baking powder, cinnamon, salt and nutmeg. Stir in apple; set aside. In small bowl, combine milk, oil and egg until blended. Add to dry ingredients; stir just until moistened. Spoon 1/2 of batter into 12 greased muffin cups. Make topping by mixing together brown sugar, flour, cinnamon, butter and nuts and sprinkle on muffins, reserving 3 tablespoons topping.
Cover each muffin with remaining half of batter. Sprinkle reserved topping on muffins. Bake at 400 degrees for 20 to 25 minutes.
