Ok so it is that time of year again, Bake... Bake... Bake... I have been looking for some recipes and especially with Apples since I am going to the orchard 3x this month to load up. Yay! Plus I had been curious about Pumkin Pie making from the Pumpkins. Well a friend of mine had already been a step ahead of me and shared these with me so I will share them with you.

PUMPKIN MUFFINS
3 1/3 c. flour
2 tsp. baking soda
3 c. sugar
1 1/2 tsp. salt
1 tsp. cinnamon
1 tsp. nutmeg
1/4 tsp. ground ginger
Mix dry ingredients and add:
1 c. oil4 eggs
2/3 c. water
2 c. pumpkin
Preheat oven to 350F degrees.Prepare muffin tins by greasing with vegetable oil or butter and sprinkling lightly with flour. Shake out excess.Fill muffin tins three-quarters full and bake at 350 degrees for 20-30 minutes or until toothpick inserted in center comes out clean.CREAMY

ORANGE ICING :
2 tbsp. orange juice
1/4 c. granulated sugar
2 1/3 c. sifted confectioners sugar
1 egg
1/2 c. shortening
1 tbsp. grated orange rind
Mix confectioners sugar and egg thoroughly. Bring orange juice and granulated sugar to boil; boil 1 minute. Add to sugar and egg mixture; blend well. Add shortening and orange rind. Beat until creamy.

Easy Pumpkin Cookies Recipe
Ingredients
1 box (18 oz) spice cake mix
1 cup canned pumpkin
1 egg, lightly beaten
1/4 cup (1/2 stick) butter, melted
2 tsp pumpkin pie spice
1/2 cup raisins (optional)
1/2 cup chopped walnuts (optional)
Directions:
Preheat oven to 350*. In a medium bowl, stir together all ingredients until well blended.
Drop by the teaspoonful onto cookie sheets; press down cookie batter with a fork, if desired.
Bake for 10-12 minutes. Let cool on the cookie sheet for a couple of minutes before removing and coolthe rest of the way on wire rack.

Fat-free Low-sugar Pumpkin Pancakes
Ingredients :
1/3 c whole-wheat or buckwheat flour
2 tsp dark brown sugar
2 tablespoons Splenda granular (or sugar)
1 1/2 tsp baking powder
1 tbsp pumpkin pie spice
pinch salt
1/3 cup canned pure pumpkin (not pie filling)
2 tsp maple extract
1 tsp vanilla extract
Boiling water, as needed
Directions
Heat non-stick pan over moderate.
Combine dry ingredients in a medium bowl.
Add pumpkin and extracts, followed by enough boiling water to achieve a batter consistency.
Spoon about 2 tbsp batter per pancake onto hot pan, brown on both sides.

Pumpkin Cookies
1 cup butter or margarine
1 1/4 cups brown sugar
2 eggs
1 teaspoon vanilla
2 cups cooked pumpkin
4 3/4 cups flour
1 teaspoon cinnamon
2 teaspoons baking powder
2 teaspoons baking soda2 teaspoons nutmeg
1/2 cup raisins (optional)
Heat oven to 350 degrees. Grease 2 cookie sheets. Cream butter/margarine with brown sugar. Mix in eggs, vanilla and pumpkin. Mix dry ingredients in a separate bowl, and then gradually add to pumpkin mixture. Stir in raisins. Drop by spoonsfuls onto cookie sheet and bake 15 minutes.

Apple Cake
4 c. fresh apples (diced)
1/2 c. vegetable oil
2 tsp. vanilla
1 tsp. salt
1 c. chopped nuts
2 c. flour
1 tsp. cinnamon
2 c. sugar
2 well-beaten eggs
2 tsp. baking soda
Mix apples and sugar thoroughly. Add vegetable oil, nuts, eggsand vanilla. Mix and add flour, baking soda, salt, and cinnamon.Bake in greased 9x13 pan for 1 hr. or until shrinks from edges ofpan. Serve plain, iced, or with cool whip

Apple Crisp
4 c. sliced apples
1/2 c. oatmeal
1/3 c. soft margarine or butter
2/3 c. brown sugar
3/4 tsp. cinnamon
1/2 c. flour
3/4 tsp. nutmeg
Preheat oven to 375 degrees. Place sliced apples in greased pan.Blend remaining ingredients until mix is crumbly. Spread overapples. Bake 30-35 min. (or until apples are tender) and toppingis golden brown. Serve warm with cream, ice cream, or cool whip.Rhubarb, peaches, huckleberries, etc., may be used instead of apples. :)

Spice cookies
1-1/4 cup pumpkin
1 box spice cake mix
Mix together, drop by the teaspoon onto a lightlysprayed baking sheet.Bake at 350 degrees for 7-10minutes. Cool.

Pumpkin Mousse
1 (15-ounce) can pumpkin
3 cups heavy cream
3/4 cup superfine sugar
1/2 teaspoon pumpkin pie spice
1 tablespoon vanilla extract Ginger snaps for garnish
Combine pumpkin, 1 cup cream, sugar and spice in a medium saucepan. Simmer over medium heat for 5 minutes. Cool fully.
Whip remaining heavy cream and vanilla to soft peaks and fold into cooled pumpkin mixture. Pour into a serving dish and crumble the ginger snaps over top before serving.
